打豬蹄凍,記憶猶深的是豬蹄的除毛工序。
那個年代里,買來的豬蹄或豬皮上的毛很多都沒有除凈。要用鑷子一根根拔除,沒有個耐心還恐怕真不行。我看見老父親戴著老花鏡在仔細地清除豬蹄上的豬毛,真打心眼里佩服老人的耐性。
把處理完的豬蹄洗凈,放入燒開的沸水中焯過,然后加進適量的醬油、料酒、茴香、大料、花椒、蔥姜、咸鹽和水后在大鍋中燒開,再用慢火燉煮二、三個小時,待豬蹄煮爛后盛出在盆中,撿凈骨頭和佐料,在煮好的豬蹄湯中加進一點化好的白礬水放置沉淀,放涼成凍后刮去上面浮油,反扣進另一盆中把盆底的沉淀刮出,再次放入鍋中燒開,盛在盆中靜置放涼成凍后即可食用。打好的豬蹄凍用刀切出一塊放在白瓷盤中,猶如一塊純凈透亮的金黃色琥珀,色澤誘人,令人垂涎三尺。
豬蹄和豬皮凍中含有大量豐富的膠原蛋白,尤其對女士們有絕佳的美容作用,是天然的美膚食品。
如今,打豬蹄或豬皮凍不再用大鍋而改用高壓鍋。買來的豬蹄或豬皮干凈利索,白如凝脂,連一根茸毛也沒有,永遠省去了去毛這一撓心的工序。只需把豬蹄或豬皮用水洗凈進沸水焯過,豬蹄可剁成小塊,豬皮可切成細條,加足佐料并適量的水,用高壓鍋壓上四十余分鐘待氣體放完后即可倒入空盆中,撿凈鍋底碎骨及佐料,放涼后刮去浮油,再回鍋中燒開復(fù)倒入盆中涼透,即可食用。
過年,端上一盤自己制作的晶瑩剔透的豬皮凍,一盤狀如綠色翡翠的臘八蒜,配上銀絲般的辣菜和綠茶豆,頓時滿座生香……
